Confessions of a Foodie by Belle Calhoune

Okay! I'm about to come clean. My family loves to eat out at restaurants. In good times and in bad, we tend to seek comfort in a nice restaurant where we can eat and talk and bond. There's something about eating at a new venue that feels particularly exciting to us. Will the food be good? So-so? Do they serve Sangria? Are those Yelp reviews truthful? Will it become a family favorite?

Chicken and waffles seem to be all the rage at the moment and we've enjoyed some all around the world. The best had to be Roscoe's House of Chicken and Waffles in California.

For me, food is a joyful thing. And I've come to realize it's something to celebrate. When my brother was terminally ill he lost his appetite. For the first time in his life he didn't want to eat and the smell of food made him sick. I think it reinforced to me the idea that life is short and one never knows when things in your life will change. SAVOR the moments...as well as the food.

These are some pictures from our Paris trip. I smile when I look at the earthy looking dish with the potatoes. It was really exciting to enjoy different cuisine.

Earthy French food..it was delicious.

My daughter and I at a cafe on the Champs Elysees! We enjoyed the best mussels.

Sometimes I decide not to post all my dining pics on my author page because I don't want to give the impression that we eat out all the time. It's usually for celebration purposes, and since life has been good lately, we've had a lot to celebrate. Praise the Lord! But in the future, I'm going to share more, because enjoying food is a wonderful thing. Recently we celebrated Fourth of July at my sister Karen's house and she brought out a dessert my mother used to serve us. It brought back all those wonderful childhood memories and it felt like my mother was sitting right there with us even though we lost her back in 2000.

When I was growing up in a family of seven we rarely ate out. I totally understand why. I wouldn't eat out if I had to pay the tab for five kids either! But when we did it was usually while on vacation or the occasional seafood outing in Cape Cod where we had a summer house. We recently took my dad out for father's day at a seafood place on the South Shore of Boston. There's nothing better than fried clams and scallops!

Fried Scallops. Sheer perfection. No one does seafood better than Massachusetts.

I still believe dining out as a family is a celebratory thing. Graduations! Honor roll! My daughter's first big job in New York City! A film deal! We celebrate it all! And I love it.

A different take on chicken and waffles at my niece's graduation celebration.

Spicy fish taco wrapped in lettuce.

Italian food. Lasagna, one of my all-time favorites.

Who among us doesn't love a churro? With chocolate sauce?

Calamari, one of our favorite dishes.

French toast with flair!

Apple crumble with vanilla ice cream.

Bolognese...my all time favorite meal. I've eaten it in more restaurants than I can recall.

Edamame. It's so good...and good for you.

Dining out is enjoyable for my family. It allows us relaxing time during which we can catch up on the day to day stuff and talk about goals and dreams. Recently we went out for Mexican food and I spotted this sign. It still cracks me up!!!

Through the Fire - Notre Dame by Belle Calhoune

The post I intended to write was always meant to be about Notre Dame, but it wasn't supposed to be like this.  Never like this.  As we all know by now, Notre Dame suffered tremendous damage on Monday when a fiery blaze broke out in the upper portion of the cathedral.  Although Notre Dame suffered catastrophic damages, many parts of the cathedral, along with religious artifacts and symbols, were spared. God is good!

Three weeks ago I visited the sacred cathedral with my husband and two daughters on our epic London-Paris trip.  Having dealt with fear of flying that hindered my ability to get excited about the trip prior to it, I was awestruck by the presence of God on my trip.  It was most evident on my trip to Notre Dame.  The moment one walks into the cathedral, you know you are in the presence of God.  You feel Him surrounding you. You see Him all around you.

First, let me say that this was my third and most poignant visit to Notre Dame. The first time I was sixteen years old, and although I enjoyed the beauty and solemnity of it, I really was too young to fully comprehend what I was experiencing.  This most recent trip was special and my husband and I truly were awestruck by the beauty of the French gothic masterpiece.  Having studied French for ten years and traveled throughout France extensively, I am a Francophile.  I feel such a connection to the French people and I have ever since I took my first French lesson as a child. As a Catholic, there are few places as sacred and awe inspiring as Notre Dame.  Visually, I was mesmerized by the beautiful stained glass windows.  And how amazing that they survived the heat and flames!

We took a moment to light a candle and offer up prayers.  It was a serene and comforting experience.

The beautiful interior of the cathedtral.  A mass was being held as we visited.  Even though the priest spoke in French, you saw people of all nationalities worshiping and listening to his every word.

Priceless religious artifacts were on full display.  Irreplaceable artwork, ornate and intricate in their details.

I thought these two pieces were simply stunning in their beauty.

Notre Dame is still standing.  It survived, much as it has carried on through wars and revolutions. And the French people, and the entire world, will assist in the renovation of Notre Dame.  It is a symbol of hope and of God's love for all of us.  The glowing cross that was shown in the rubble is a powerful reminder of HOPE.

God was there when Notre Dame was consumed by flames.  He was there in the aftermath when people were outside singing and praying. He protected the pompiers (firemen) as they raced to extinguish the blaze.  He aided the French chaplain, Jean-Marc Fournier, as he entered the burning cathedral to salvage priceless religious artifacts. He was there, making sure all wasn't lost.

Sadly, Notre Dame won't be open to the public for six long years.  I feel humbled and grateful that we were able to make this visit.  I am thankful to God for guiding me on this journey.  There are no accidents in life, and I truly feel that God was showing me that something wonderful awaits you if you push past your fears and embrace all the world has to offer.

Blessings! Happy Easter!

Make it work...by Allie Pleiter

One of the themes that keeps showing up in my books is resilience. The ability to find a “Plan B” when our first plan gets scuttled. It’s my personal believe that God shows His providence and imagination on our Plan B’s. I can recall many times where His plan (because it’s really only Plan B from my perspective, isn’t it?) turned out far better than what I had in mind.

The same is true for Tess Buckton. She’s come home to the Blue Thorn Ranch thinking everything has fallen apart, only to learn things are falling into place. Cooper Pine is struggling to put things right in his world for his daughter. Like all great love stories, they have to go through a lot to realize how much they need each other. But it all works out in the end, and The Texas Rancher's New Family wraps up the series with heartwarming perfection.

Us authors have to show a bit of resilience, too.  If you remember from the post on August 29, Belle Calhoune and I went through a mix up of our own. Belle received the large print copies of my book while I received the large print copies of hers. When we discovered the issue, we were happy to realize that a “swap” could solve the problem. But why leave it there? Let’s have fun with it, and each give away the other’s book.

So that’s what we’re doing. In August Belle gave away a copy of my book. So now, I’m giving away a copy of hers. Leave a comment along with your email and I’ll put your name in a drawing for a copy of Belle’s His Secret Alaskan Heiress.

Turn our predicament into your prize!
