Summer Critters (Warning--Pictures!)

All summer I've been taking walks whenever possible, and I've encountered a LOT of critters! Now, I'll be the first to admit I'm a big baby when it comes to the creepy-crawlies. Spiders make me scream; snakes give me heart attacks. And since I'm a drama queen, I took lots of pictures to prove I had reasons to be afraid.

First up, I was just walking along, minding my own business when I almost stepped on this little guy. Yes, it took ten minutes for my pulse to return to normal!



This spider? HUGE. And in the bathroom at the park I was visiting. Yikes! In my mind, this is one step away from a tarantula.



In June, my girlfriend joined me on a research trip to the nearby Lake Erie islands, and we were both shocked at how late the Mayflies appeared this year. Here they are on my leg and covering a pole (they are harmless but icky!).




Also on this trip, we got to see what was under the black mats on one of the islands--it wasn't a pleasant surprise! To be fair, scientists research these snakes, so there's that.



I came across this adorable toad sunning himself while I was walking the other day. I don't mind frogs and toads. I like his pose.


Finally, in July we spent a week in Florida. We saw all three of these on the same night. The tiny crab was my favorite!




Not pictured? The raccoon that climbed the tree right outside the deck! The little guy was too fast for me...

Oh No! Winter Killed Our Plants!

Winter was harsh. We're talking harsh as in negative thirties and forties for days back in February or March. Sorry, both months run together for me! They were both brutal.

And now June is here, but a few of our pretty plants are not.

Yes, winter killed some of our bushes.


Two knockout rose bushes didn't make it. One hydrangea died. And the tree my husband has always thought hideous is officially dead, too. (He's happy about it. I finally conceded it was time to chop it down.)

A few of our other outdoor plants had odd reactions to the cold temps. One bush died at the top but is thriving on the bottom. A boxwood has one side full of yellowish brown leaves, while the other side is as green as can be. It's weird!



Unfortunately, we've had a lot of rain all spring. In fact, you might say we've had rain every day this spring. And it's still coming! I just don't know how our bushes and flowers will handle it. So far, the grass couldn't be happier. It's growing roughly six inches a night.

Okay, I exaggerated, but still--grass needs mowing every other day.

It's strange to see empty farm fields that would normally have corn plants waving like Ys in rows. I love to walk, and I usually think, Oh, look, the corn is three inches tall. A week later, Wow, it has to be six inches. It's really moving.

*sigh*

Yes, I think about corn as I walk.

Clearly, I need to run over to the ice cream parlor and remind myself summer IS here and the corn WILL get planted and no matter how weird the weather is, our grass and bushes are hardy. If they survived that wacky winter, they'll surely survive anything summer throws at them.

My Favorite Easter Desserts

With Easter right around the corner, I'm eagerly anticipating making a dessert or two to accompany our dinner. Easter is such a special day. I'm filled with joy Jesus loved us so much that He died and rose again to take away our sins. What better way to celebrate than with a good meal after the church service!

Last year I attempted two new recipes. My husband loves this lemon fluff-like dessert his grandmother used to make, so I found a similar recipe on Pinterest. Unsure if the recipe would match his memories, I also decided to make a lemon pie.

The fluff was tricky to make, and it didn't reach quite the right consistency. I threw that recipe out! But the lemon pie was super easy, VERY sweet, and we all loved it!

Another dessert I found on Pinterest has become a staple in our house. It's called No Bake Chocolate Lasagna. Yes, CHOCOLATE LASAGNA! It's so delicious!

Basically, it's crushed Oreos mixed with butter and pressed into a pan. Then there's a layer of whipped cream/cream cheese. Then chocolate pudding. More whipped cream. And tiny chocolate chips! Yum!

Recently, I created my own Chocolate Strawberry Trifle to celebrate Valentine's day. It would make a great dessert for a crowd. It does take planning and time, but it's not difficult to make. The picture below doesn't really do it justice!





Here's what you need:

Chocolate Strawberry Trifle


  • 1/2 of a prepared Devil's food cake (I made two round cakes from a 15.25 ounce box mix. You'll need 1+1/3 cups of water, 1/2 cup vegetable oil, and 3 eggs to make it), cooled and cut into cubes.
  • 1 prepared 3.9 ounce package of chocolate instant pudding (you'll need 2 cups of cold milk to make it).
  • Either 3 cups of homemade whipped cream, see "Homemade Whipped Cream" at LiveWellBakeOften.com (you'll need 1.5 cups of heavy whipping cream and 1/4 cup of powdered sugar to make it) or a 12 ounce container of Cool Whip.
  • 1 pint of strawberries, rinsed, hulled, and sliced.
  • Chocolate shavings for the top. (I shaved mine using a vegetable peeler on a dark chocolate candy bar.)


In a clear glass bowl, layer cake cubes, then pudding, then whipped cream, then a layer of strawberry slices, more cake cubes, more pudding, more whipped cream, and top with more strawberries, cake cubes, and chocolate shavings. If you have leftover ingredients, keep layering until the bowl is full.

This can be made up to a day ahead of time and will easily feed 6-8 people. It's wonderful!

February Delights

It's almost Valentine's Day, my favorite day in February, but I try to enjoy the other twenty-seven days of the month, too.

Unfortunately, it's COLD here in northern Ohio. And snowy, rainy, windy, overcast--sometimes all four--depending on the day. I am really over winter at this point. Spring can't come soon enough! But it never arrives until mid-April at the earliest, and sometimes it skips us altogether. That's why I go out of my way to find February delights.

Here are the things I'm enjoying this month.

FEBRUARY DELIGHTS


1. Old seasons of The Great British Baking Show. In December, there was a special called The Great American Baking Show: Holiday Edition. It introduced me to the marvelous fun of amateur bakers being tested on all things baking--under a tent in Great Britain! Oh, how I love British accents. And I love baked goods. I'm thrilled our library carries DVDs of the original show. It's been a nice distraction from the weather.

2. Women's Christian living books. I recently read Rebekah Lyons's You Are Free: Be Who You Already Are. It was very satisfying. I'm now reading Priscilla Shirer's Discerning the Voice of God: How to Recognize When God Speaks. I'm enjoying it, too.



3. Happy music! I found a playlist on Spotify devoted to Frank Sinatra. I also dusted off a Norah Jones CD. Good times!

4. My treadmill. You didn't think I'd put that on there, did you? Haha! It's true, though. I usually work out to exercise DVDs, and I decided to switch it up. I like walking on an incline. Who knew?

5. Happier, Gretchen Rubin's podcast. She has long podcasts with her sister, Elizabeth, and supershort ones called, A Little Happier. Both are great!

I'm always on the lookout to find ways to make winter pass by pleasantly.

One-Minute Christmas Vacations

Every December my emotions go all Jekyll and Hyde. The lights on the Christmas tree? I smile every time I walk past them. The Christmas list that never seems to end? My blood pressure rises just thinking about it. I flip-flop between the joy of the season and the pressure it brings.

When I started blogging ten years ago, I posted one-minute vacations throughout the month of December. They were little reminders to chill out, take a deep breath, and enjoy the Christmas season. Today seems like the perfect time to do just that.

Sit back, grab a cup of coffee, cocoa, tea, or Mountain Dew, and let's enjoy a break together!



Have a little snack, too! I love treats to nibble on...


Are you cold? Need a cozy blanket to wrap up in?


Okay, good. We're all set now. Settle in and relax. Instead of thinking of all the things we need to do, we're pausing. We're JUST SAYING NO to the voice in our heads cracking the whip. It's okay to take a step back and not do anything for a minute. It really is.

We're going to go one step farther. It's time to daydream. I like to play a little game called If I Had a Day Off for Myself...

If I had an entire day off and could only spend it being completely selfish, what would I do?

My thoughts in no particular order:


  • Watch Christmas cooking shows in my pajamas and drink coffee and eat blueberry breakfast cake (recipe is HERE, and it's delicious!).
  • Read a Christmas classic. I fell in love with Miracle on 34th Street by Valentine Davies when I was in high school. (A few weeks ago, I read A Christmas Carol by Charles Dickens for the first time!)
  • Catch up with my friends.
  • Read Luke chapter two and compare my whiny self to Mary when she's on her way to Bethlehem. Joseph is GLAD he didn't have to deal with me. "My back hurts. The baby kicked my rib. I'm STARVING! What is the point of this census??"
  • Take a long nap.
  • Buy a box of chocolates for myself and eat all the ones I like.
  • Listen to my favorite Christmas music.
  • Browse the aisles of our local drug store for new nail polish (I recently stopped chewing my nails by giving myself manicures once a week).
  • Catch up on all the Hallmark Christmas movies I've recorded.
  • Dream of a tropical vacation.
  • Order a pizza with my favorite toppings.
  • Buy a decadent coffee drink and walk around a light display with my hubby.



This entire list is so simple. As I read through it, I realize I can do all of these things throughout December. I don't need a day off!

Write your own list and find ways to slip the items into your days. Sometimes the most meaningful holidays happen when we take time to do simple things that feed our souls.

Why Embracing October Makes the Holidays Sweeter

It's about this time of year I start anticipating the holidays. Turkey and stuffing. Warm sweaters and hot cocoa. Christmas carols and Hallmark movies. Candy canes and snowmen. You know how it is.

But Thanksgiving and Christmas are still weeks away, and October is in all its vibrant glory here in northern Ohio. Rather than breaking out my Christmas music or planning the side dishes I'm making for Thanksgiving, I take the time to embrace October.




The summer grass and flowers are dying. Leaves tumble to the ground--slowly on a mild day, quickly on a rainy one. Every car ride reveals orange, maize, and rust-colored trees intermingled with the evergreens. The colors typically last about two weeks--give or take--around here, and it's oh-too-easy to miss them.

I usually listen to classic jazz in the fall. Nina Simone, Miles Davis and Bill Evans get me into a mellow frame of mind. I need the downtime, the lull before the end of the year hustle bustle.

As much as I want to watch all my favorite Christmas movies, I refrain. Click through television channels and you'll see football, new episodes of favorite shows, more football, scary movies, and, yep, more football. I watch it all! Except for the scary movies. I get scared easily!

October always passes quickly. Before I know it, I'm moaning about all the Halloween candy I ate and turning a new page on my calendar. November arrives. And I'm ready to break out those Christmas CDs, search for side dish recipes to serve on Thanksgiving, and to watch movie after movie on the Hallmark channel.

By pacing myself and embracing October, experiencing all the joys of the holidays is that much sweeter.

Top 3 Ways to Stay Productive This Fall






Hello everyone! Allie Pleiter and I (JillKemerer) are chatting about how to stay productive this fall. I’ve always loved September. I load up on back-to-school sale pens and notebooks for myself, check out the cool-weather fashions cropping up at the mall, and anticipate russet leaves, cool nights, pumpkin spice everything, and cozy blankets.

Inevitably, visions of Thanksgiving and Christmas and all that hustle-bustle get me excited—Hallmark Christmas movies!!—but just as quickly, fill me with doubts.

Will I meet the professional goals I’ve set for the year?
What about the personal goals—you know, the books I want to read, the places I want to go, the things I want to do?

At this point my mind goes blank as I try to remember what those goals were. Before I know it, I’m munching on Tootsie Rolls and fighting discouragement.

How will I get everything done?

My memory is a flighty little thing, so I skim my day planner to see what I’ve already accomplished. Then I review my current projects and jot down a few personal and professional goals I want to meet by the end of the year. My plan is ambitious. Sure, I can trim it down, but what if I press forward with it? Can I find a way to meet these goals?

Since Allie has written two books on staying productive during challenging times, I’m leaning on her for advice.

Allie, you’re a master at staying on track and getting things done even when life is super busy. What are your top three tips for staying productive this fall?

Fall is an energizing time—summer’s lazy quality drifts away and our brains gear up for productivity. It’s an excellent time to take stock, tweak plans, and even do a bit of dreaming. I definitely believe us grown-ups can get in on the “back to school” atmosphere and take steps to finish the year strong. 

Here are my top three productivity tips:

1.  Make a list.
Lists help us focus and see the whole of our task load. Even if your list ends up being very long, I promise you your stress level will go down just knowing you’ve collected everything on paper (rather than hoping your brain will hold it all).

2.  Break it down into daily portions.
A huge list feels just that: huge. It’s important to have the full scope of your demands and goals laid out, but it can easily overwhelm. Look at your list and think about what needs to be done or can reasonably be done—-just for today. I do this every Sunday night for each of the days in my work week ahead. That way I’m not held hostage by waking up in a funk on Tuesday or the temptation of a Netflix binge on Friday. I’ve got a practical dose of one-day-sized tasks batched up and ready to go, before my brain or mood can take off in other directions.

3. Number your list.
Seriously, this is the single most transformative tactic I teach. Why? Because the most powerful knowledge of all is knowing what to do next. Ordering your tasks for any given day gives your ambition “marching orders.”  Your brain knows that #1 comes first, then #2, you’ll be done at #6, etc. It sounds simplistic, but try it and you’ll discover how much it helps you stay on track!

These three tips, even in the most trying of times when you feel drowning in demands, can get you up and running toward your goals. Which leads me to a fourth powerful tactic: go back daily and take a grateful look at everything you’ve been able to accomplish! Nothing builds momentum like knowing you’re gaining ground, no matter how slowly.

Thanks, Allie! This is just what I needed. I can be hit or miss on your first two tips, so this was the nudge I needed to be more consistent. And tip 3 made me slap my forehead with a “duh.” Of course—number the list! Brilliant!

It's Only a Party if Love Inspired is There! by Pamela Tracy

Yeah!  This year I was able to attend the Romance Writers of America's conference.  With just one except, I had the best BEST time.  Below, are some of the photos I took of Love Inspired ladies, most of whom are on this blog.  Enjoy!

June Delights {and Giveaway!}

June! How I've longed for you through a cold, dreary, never-ending winter. And you're here--at last!

There's nothing I don't love about this month. That's a double negative right there. Maybe I should rephrase it. I love everything about this month! Better.

I live in northern Ohio where the winters are long, summers are short, falls are gorgeous and spring...well, sometimes we get spring and sometimes it skips us.




My Favorite June Delights


School is out. My 6:15 am alarm is off. Yay! I still set the alarm, but 7:30 is more my style. Plus, I can stay in my pajamas and sip coffee without the busy-busy of school year stuff.

Blue skies, sunshine, temps in the seventies and eighties, green vegetation everywhere you walk. Being outside is a must. I walk as often as possible. My tip? The mosquitoes are out, so load up on bug spray.

Happy anniversary! My hubby and I married twenty-four years ago this month. It's hard to believe! I still feel young at heart, and I'm thankful for my husband every day.

Baseball! My son plays baseball, and summer ball will be wrapping up next month. I also love watching the Detroit Tigers on television and going to Toledo Mudhens games. There's something so nice about spending the afternoon at a ball park.

Beach reads. Who needs the beach to read a fun romance? Not me! I'm digging into Becky Wade's Falling for You. It's her second book in the Bradford Sisters Romance series. Becky writes contemporary romance novels for the Christian market. Love her voice! I can't wait!

Farmer's markets. Thursday nights are for strolling the streets of Perrysburg. Not only is this farmer's market in an adorable downtown, it also features homemade kettle corn. Yum!
