Missy Tippens Sharing a Recipe

Missy Tippens, here. I thought I'd share a quick and easy recipe with you today. It's something I recently made in a pinch. Dinner was ready in less than ten minutes.




Ingredients:
1 bag frozen stir-fry vegetables
1 package imitation crabmeat (or any meat you'd like to prepare), chopped/sliced
Rice--I use boil in bag 10-minute rice
1 carton Philadelphia Cooking Creme (I used Italian Cheese and Herb flavor)
Canola oil (about 1-2 teaspoons)


Put rice on to cook.
Heat oil on medium high. Add frozen vegetables and cook until crisp-tender. Add in crabmeat and the Cooking Creme. Stir until well mixed and warm. Serve over rice.

  2. Very similar to yours, in fact... but instead of frying I put a bit of olive oil in a pan, then I throw a package of ready to fry veggies and on top of it I put pieces of fish (without spines or skin), add a bit of water and let it all cook.

    When I'm off my working clothes and ready to put the table is ready with the less hassle. I usually have those packages - the veggies and the fish - spare in my freeze, for those days I arrived home late from work and find the birds with their mouths open asking "Mum, when do we dine?".

    I really have to try it with the crab meat...

  3. Missy, my favorite 'in a hurry' meal is to set up a baked potato bar. Baking the potatoes in the microwave is quick and practically clean-up free. Then set out bowls of sour cream, shredded cheese, bacon bits or chopped up ham slices and whatever else strikes your fancy and a nice hearty 'help yourself' style meal is ready in less than 30 minutes

  4. Sounds good Missy! I used to do something similar with teriyaki sauce or whatever sauce I had handy :) I've recently given up using the microwave, but am realizing that doig stuff on the stove and in the oven really doesn't take that much longer.

  5. Teresa, that's sounds yummy and healthy! I guess the fish steams, which would keep it moist. I'll give your method a try.

  6. Winnie, I love that idea! I also like to keep a can of chili on hand to put on baked potatoes. You could always add that as well. :)

  7. Eva, you're probably right. And there are a lot of things that just aren't good in the microwave. My son has quit microwaving frozen pizzas and opts to bake them in the oven.

  10. Thanks for the tip, Missy! I've wondered how that cooking cream would taste. We do a lot of simple meals around here now, so I'd have to say noodles with pesto is the fastest thing I fix. Throw in a salad and fresh veggies and it's fairly healthy.
